Ingredients
- 2 eggs
- 400 ml milk (2 cups)
- 2 tea cups flour
- Salt
- A bit of oil
- Whatever you want for the filling
Instructions
- Break the eggs in a bowl and add salt. Stir for at least a minute, until you get a homogeneous mixture.
- While mixing, slowly pour the milk. This helps it become even and prevent getting lumps.
- Slowly add flour while mixing. Preferably add a couple of spoons, mix, repeat, so it breaks down evenly.
- Add 1-2 spoons of oil to the mixture to help with sticking to the pan. Leave the mixture to rest for a few minutes.
- Heat up the stove, while the mixture is resting. You can add a bit of oil on the pan.
- Once the pan is hot, pour one ladle of the mixture in the pan, starting from the middle, going in a spiral towards the outside. Try to make an even cover, and fill any holes.
- Keep the pancake in the pan for a minute or two, until the ends start rising and become slightly golden. Using a spatula, lift the pancake and turn it over for about 30 seconds to a minute.
- Once done, place the pancake in a plate and repeat the process until the mixture is over.
- The pancakes can be served immediately, filled with anything you want. Nutella, jam, cheese or basically anything.
